Weekend Wrap-Up

This weekend was CRAZY!! Friday during the day I subbed all day and then headed to a children's sale with Teresa. We then met up with the guys for dinner... Hope got a great horse at the sale and they are all pictured above with Eli.
Saturday got off to a bang with Lunch with Regan, which I should have gotten a pic, but forgot to. I did pick up some great clothes at the mall while lunching.In the evening we met up with these great folks. We tried a new place called Harvest. It was pretty good, but the entertainment was so much fun!
A pic of us on our date night. We left ELijah with a colleague of Kent's who he also gives voice lessons to her daughter. They had a blast and Elijah was well loved that night!
Here is a quick pic of the little guy. This is how he spent most of his weekend... poor little guy. Sunday we had lunch with Auntie Susu... and hit the Lancaster mall up... then it was off to Nana and Pappy's for a quick visit and to drop some stuff off. Then finally home and we all went to bed early!
The weather here was AMAZING!!! So enjoyed every minute of it because who knows how long it will take to see it again!

Date Night

I know this picture is cut off a little, but it shows how happy we were last night to have a date night!!! K's parents watch Elijah and we were off to the movies and dinner. We saw Dear John, it was good. I was a little disappointed by the ending, but it was still fun. Afterwards, we went out to this great Italian place near the movies. It is one our favorites.
But of course after our dinner was over we raced home to see this little guy. We missed him so much! This is one of my favorite pics of him lately. He is really getting smiley and happy. His week included a couple of playdates, grocery shopping, and having a great day with Nana.

Spring Break Update

Adventure Days are the best things! My hub and I have figured this through this week. We had Spring Break this week in our neck of the woods and being both teachers we had the week free. We have even wrote down five activies that we would like to do sometime put them in jar and then we pick out of the jar for an activity. This could be an afternoon movie or lunch somewhere special or far away. This could include kids and could be a family event. Check out other things at We Are That Family

UPDATE ON OUR LIVES
These last couple of days have been WONDERFUL! We have eaten way too much and relaxed a lot. We have just enjoyed life. K has been organizing our office, which has been neglected for way too long. So I sit here and type in a clean neat space. We are leading small group tonight and for the next couple of weeks. So this should be a lot of fun. Tomorrow is another adventure day... so we will see what happens!

Monday... Monday....

I have a bad case of the Monday's... I just want to go home put my p.j.'s on and take a nap! I know that sounds like pure bliss right now, but I have plans for the Y and for dinner. Why do I have to be so darn social!

Anyhooo.. the weekend! We worked and that is not why I am feeling so tired. The boys were great... I just did not sleep that well. I normally have no problem with that! K actually calls me a narculep.. I am sure that is not spelled right... the disease where you sleep a lot! The weekend flew by. Not much happened because plenty of the little gentlemen were in trouble. So we pretty much chilled at home except when I took two to go and see Monsters vs. Aliens... that was pure torture! The kids were great the movie was awful!

So this week looks on. I have three more days of work until SPRING BREAK!!!! I can't wait.

Easy Recipe and Yummy Results!

This week is flying by!! I can't believe it is Wednesday already. I have made two really great meals this week which is producing leftovers for the rest of the week YEAH!!! I have been recently getting really into making up new recipes and cooking in general!

So last night I made taco lasagna and it was super yummy! Even yummy enough that K ate two helpings and was contemplating a third, but stopped because I was like we are doing Weight Watchers!

Here is the recipe:

1lb. of either ground Turkey or Beef browned
2 cans of diced tomatoes (I used the chipotle flavored ones and one with green peepers and onions)
1 can of black beans
6 whole wheat flour tortillas
1 1/2 bags of shredded cheddar
1 tea. of pepper
3 tea of cumin
2 tea of ginger
2 Tbsp. of Hot Sauce
1 tea. of hot pepper flakes

Brown the meat and add beans, tomatoes, and all seasons. Spray the bottom of a 9x13 pan and place the first two tortillas in the bottom, then layer the meat mixture and sprinkle an even potion of cheese. Repeat steps for two more layers and cover top with cheese. Bake for about 30 mins at 350 or until bubbling and cheese is melted. This could be served with salsa and sour cream or with more or less hot seasonings. We like things a little spicy! Sorry I don't have any pics. we do have leftovers so maybe I will put a pic of the leftovers on here! Enjoy!

Weekend Wrap-Up

I am posting in a new color because this weekend it felt so much like spring! It was beautiful here and I opened my windows for the first time in a long time. Don't get me wrong I do love winter and the snow days that it brings. Not much happening so it was nice to just spend time at home and get a few little things done. Saturday night I got to have dinner with Super Sue my roomie from right before K and I got married! Oh those were the days... lots of secrets and way too much fun! Sunday we went to church and then drove to Maryland to meet up with the Malengo's


Courtney and Ray made a delicious dinner! We chatted, played Rock Band and Guitar Hero, caught up on married life and all of it challenges! We had a blast and wish we got to see them more!! Courtney and I have been friends since our Eastern Days and she was in my wedding! It was great to see their new place, which is adorable!! Off to another fabulous day at work!
