Easy Recipe and Yummy Results!

This week is flying by!! I can't believe it is Wednesday already. I have made two really great meals this week which is producing leftovers for the rest of the week YEAH!!! I have been recently getting really into making up new recipes and cooking in general!

So last night I made taco lasagna and it was super yummy! Even yummy enough that K ate two helpings and was contemplating a third, but stopped because I was like we are doing Weight Watchers!

Here is the recipe:

1lb. of either ground Turkey or Beef browned
2 cans of diced tomatoes (I used the chipotle flavored ones and one with green peepers and onions)
1 can of black beans
6 whole wheat flour tortillas
1 1/2 bags of shredded cheddar
1 tea. of pepper
3 tea of cumin
2 tea of ginger
2 Tbsp. of Hot Sauce
1 tea. of hot pepper flakes

Brown the meat and add beans, tomatoes, and all seasons. Spray the bottom of a 9x13 pan and place the first two tortillas in the bottom, then layer the meat mixture and sprinkle an even potion of cheese. Repeat steps for two more layers and cover top with cheese. Bake for about 30 mins at 350 or until bubbling and cheese is melted. This could be served with salsa and sour cream or with more or less hot seasonings. We like things a little spicy! Sorry I don't have any pics. we do have leftovers so maybe I will put a pic of the leftovers on here! Enjoy!

We love Mexican-style food! I never thought of using ginger in it, though.
BTW,you know, you can put the meat part of this, including the spices and tomatoes, into the freezer. (You could probably freeze the whole thing, as a matter of fact.) So next time, make twice as much and you'll have a future meal waiting for you in the freezer.
